Vineyards
The Seven Oaks vines are rooted in river-worn sandstone boulders and gravel mixed soil with varying amounts of sand and clay. Our rainfall is mainly during the winter, with the occasional snow-capped mountains towering over the valley to ensure that the vines are dormant in winter. With a typical Mediterranean climate, the summers are warm, dry and windy, with the hottest months promoting the ripening of the grapes during January and February. Due to the topographical diversity over short distances, the soils vary, resulting in different tastes in the same cultivar block.
The farm consists of 55Ha under vines of which 40% are red (Pinotage, Cabernet Sauvignon, Shiraz, Merlot, Ruby Cabernet and Cinsaut) and 60% are white (Sémillon, Sauvignon Blanc, Chardonnay Chenin Blanc and Colombar).
Each phase from pruning through to harvesting in the vineyards is actively monitored throughout the year to ensure high-quality grapes. During harvesting, great care is taken to hand-pick the best grapes to produce our award-winning wines.
Willem Viljoen, our viticulturist, philosophy is: “Farm for the future where quality overweighs quantity”.
Cellar
Attention to detail, dedication and passion is undeniably the key qualities at Seven Oaks Winery, which we believe finds its expression in the quality of our award-winning wines. Our limited quantity of quality wines are therefore “Produced with Passion” by our consultant winemakers
Our wine is stored in ideal maturation conditions before being released to our customers, thus providing high-quality award-winning wines with
We have a total production of in excess of 30 000 bottles per annum. Whilst the bulk of our grapes are delivered to Mountain Ridge Cellar, we brought in 70 tons of grapes into our cellar during the 2022 harvest.
Our premium red wines are currently ageing in French and American oak barrels. The characteristics of these barrels give the wines great structure, complexity, finesse, and good ageing potential.
Seven Oaks Range Of Wines
NOBLE LATE HARVEST
These are our lifestyle wines that are full of flavour, for everyday easy drinking and offer superb value for money. Enjoy at home or share with friends. We make them in white, rosé, and red styles. Our bottle labels show our seven oaks: 6 large and one small tree.
These super premium wines reflect our long history and reflect our Seven Oaks name. Only the best grapes are picked for our flagship Collection. We offer two exclusively red wines that are barrel-matured, one single cultivar and other a blend of two cultivars.
Just one bottle in this Collection, another red blend. We have named it after a lay preacher who made a moonshine blend. He was the previous farm manager who enjoyed a tipple and so we kept him on until he retired. His name lives on in this wine.
The Per L’Amore di Andie MCC Brut is named after our daughter, Andie. She has Epilepsy and requested that we place a small purple ribbon on the label (we placed it close to the base of the lady’s dress) and that we donate R10 per bottle sold to the Epilepsy Foundation to assist with research.
This MCC Brut is not produced in our Winery.
Noble Late Harvest is made from grapes infected with noble rot known as Botrytis. The grapes are carefully hand-harvested at 38 Balling and were then left in cold storage (2C) for 3 days to further enhance the flavours. It was then lightly pressed and immediately filtered after which a slow fermentation process followed in stainless steel tanks.

A full-bodied Bordeaux “Right Bank Style” blend of Merlot, Cabernet Sauvignon, Cabernet Franc, Malbec and Petit Verdot. As the wine enters your mouth, the palate comes alive. Fresh, red, ripe cherry flavours joyfully play onto the palate. The wine unfolds its velvety, smooth, soft tannin texture and structure with a subtle perception of wet stone (mineral), chalk and cocoa-dusted French dark chocolate truffles. Concentrated and complex, the use of French oak (25 months) adds complexity and compliments the kaleidoscope of dark and red fruit flavours of the wine. A wine that is in pursuit of perfection.
